Hot cereal breakfast cups
As the air turns colder, I turn to my comfy clothes and cozy blankets. This signals the end of the warm weather season, but the promise of change and new beginnings. I think no matter how old I get, I will think of September as back to school.
My favorite stand-by for easy breakfast was oatmeal. I love a simple, filling, healthy breakfast that's warm and cozy and I can feel good about eating.
I've realized in my hurried last couple of weeks that I need something extra special to grab and go in a few easy steps.
I had Bob's Red Mill Creamy Buckwheat hot cereal handy and tried something new. I made it according to the instructions and then added frozen wild blueberries and cinnamon. I gently stirred it and popped into a muffin tin and then into the freezer.

Just thaw in the fridge the night before or in the microwave the day of and add any other fixin's you'd like. I added maple syrup and pecans. It feels so decadent!

Creamy buckwheat hot cereal frozen cups
Ingredients
1 cup of Bob's Red Mill Hot Cereal
3 cups of water
1/4 tsp salt
Directions
1. Make hot cereal according to directions on the bag.
2. Add in 1 cup blueberries and 1 tsp cinnamon.
3. Stir gently and divide into greased muffin tin.
4. Freeze overnight.
5. Thaw 1-3 cereal cups in microwave. Heat for 1 minute. Stir in add ins. Enjoy!
